Cookie Crust Blueberry Pie

This Cookie Crust Blueberry Pie Recipe becomes extra tasty with a vanilla waffer cookie crumb crust!

Cookie Crumb Crust:
2 cups fine vanilla wafer crumbs
1/2 cup melted butter
1/3 cup sugar
Combine all ingredients; press over bottom and up sides of 9-inch pie plate. Bake at 400° for 10 minutes. Cool then fill.

Filling
6 cups fresh blueberries, divided
1/4 cup sugar
2 tablespoons water
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon butter
1 tablespon lemon juice
whipped cream or purchased whipped topping

Directions:
Combine 2 cups berries, sugar and 2 tablespoons water in large saucepan; bring to a full boil. Dissolve cornstarch in 1/4 cup cold water; add to blueberry mixture. Return to the boil, stirring constantly.

Reduce heat to low and cook, stirring, for 2 minutes. Remove from heat. Stir in butter, lemon juice and remaining 4 cups of blueberries. Spoon into crumb crust. Let stand 3 hours until set. Serve with whipped cream or topping.Serves 8.

Quick tip: Use a store bought cookie crust in place of the homemade version.

1 sm. box sugar free jello (lime)
½ c. boiling water
2 c. Key Lime yogurt (6-oz.)
1 cool whip
1 graham cracker crust
Mix jello and water until dissolved. Then add yogurt and cool whip. Mix together. Pour onto crust and let set-up in the fridge.

1 c. sugar
1 c. water
3 Tbs corn starch
4 Tbs Strawberry jello
¾ tsp lemon juice
Strawberries (washed and cut)

Mix sugar, corn starch and water, cook til thick and clear. Remove and add jello. Cool slightly. Mix in strawberries. Pour on graham cracker pie crust.

6 oz. can frozen lemonade concentrate (any flavor)
1 can sweet and condensed milk
8 oz. cool whip

Mix and add to graham cracker crust and freeze.

1 small box instant chocolate pudding
1 banana
1 small carton cool whip

Make up the pudding using directions for pie on box. Slice 1 banana into bottom of pie crust. Pour pudding on top. Top with cool whip and chill.

½ c. corn syrup
¼ c. butter (melted)
3 eggs (well beaten)
1 c. pecans
1 unbaked 9” pie shell
Combine sugar, syrup, butter, add eggs and pecans to mixture, mix thoroughly. Bake 375° for 40-50 min.

Peanut Butter Pie

1 graham cracker pie crust 4 oz cream cheese

1 cup powdered sugar 1/3 cup peanut butter

1/2 cup milk 9 oz cool whip

Blend cream cheese and sugar until smooth.  Add peanut butter and milk, mix well.

Fold in Cool Whip and pour into graham cracker crust and freeze.
